Crust

  • 1 cup sugar
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 4 large eggs
  • 2 tbsp all-purpose flour optional, for stability
  • 1 tbsp lemon juice

Method
 

Prepare crust
  1. Preheat oven to 325°F (163°C).
  2. Mix graham crumbs, butter, and sugar.
  3. Press into a 9-inch springform pan.
  4. Bake 10 minutes and cool.
Make filling
  1. Beat cream cheese until smooth.
  2. Add sugar and mix.
  3. Add sour cream, vanilla, lemon juice, and flour.
  4. Add eggs one at a time—mix gently (don’t overbeat).
Bake
  1. Pour filling over crust.
  2. Place pan on baking sheet.
  3. Bake 55–65 minutes until edges are set and center slightly jiggles.
Cool slowly
  1. Turn oven off and crack door open.
  2. Leave cheesecake inside 1 hour.
  3. Refrigerate at least 6 hours or overnight.
