Method
Prepare crust
- Preheat oven to 325°F (163°C).
- Mix graham crumbs, butter, and sugar.
- Press into a 9-inch springform pan.
- Bake 10 minutes and cool.
Make filling
- Beat cream cheese until smooth.
- Add sugar and mix.
- Add sour cream, vanilla, lemon juice, and flour.
- Add eggs one at a time—mix gently (don’t overbeat).
Bake
- Pour filling over crust.
- Place pan on baking sheet.
- Bake 55–65 minutes until edges are set and center slightly jiggles.
Cool slowly
- Turn oven off and crack door open.
- Leave cheesecake inside 1 hour.
- Refrigerate at least 6 hours or overnight.
